The roast vegetable terrine is a vegetarian dish and looks very colorful. The dish contains char-grilled veggies with a pungent hint of garlic throughout. This is a very favorite and a must on the Christmas table.

- Large red bell pepper (3)
- Medium yellow bell pepper (2)
- Sliced large zucchinis (3)
- Sliced medium eggplants (2)
- Crushed garlic (1 clove large)
- Extra virgin olive oil (⅓ cup)
- Olive oil (¼ cup)
- 2 cups of basil leaves
2. The cooking method of roast vegetable terrine;
You will need a char grill or a barbeque plate which you have to preheat on medium. Now place a terrine mold of 20*10cm with plastic wrap. The edges of the plastic wrap should overhang.
Now get a mixing bowl, and place all the vegetables in it. Add olive oil and seasoning of your choice and give it a toss. Then char grill the bell peppers until they become tender and the skin becomes black. Let it cool and then peel off the skin. The next process is to char grill the rest of the vegetables on both sides. You need to grill each side for 1-2 minutes until there are grill marks on the vegetables. Now remove from the grill, and toss with olive oil in another bowl.
Now layer the sliced zucchini, the remaining vegetables with basil leaves in the middle, and eggplants in the end. This will make the dish look colorful. Pour the remaining olive oil and fold the plastic wrap to enclose the vegetables. Keep it chill for the whole night. Once it is ready to be served just upturn the wrap onto the plate. Pay attention while removing the plastic wrap. Garnish with basil leaves on the top. Serve sliced.
