If you’ve been to Christmas and NYE parties, there’s a chance that you’ve seen these appetizing pastries of meat. Over the years, these pastries have been served on numerous occasions. Pate Chaud (Pâté Chaud), or Banh Pate So (Bánh Patê Sô), have been an iconic aspect of Vietnamese dietary tradition.

In this article, you will come to know everything about Pate Chaud; from the recipe to the calories, so that you can prepare this luscious plat du jour for an upcoming occasion, or simply to indulge in it yourself. Not only is Pate Chaud stress-free to prepare, but it is also a prominent appetizer to be served to guests!

WHAT IS PATE CHAUD?

Bánh Patê Sô, renowned as Pâté Chaud, is a Vietnamese aromatic pie pastry. It is prepared out of a thin and flaky coating of dough and filled with meat. Customarily, the filling is comprised of ground pork, however, chicken and beef have become common in Pate Chaud.

Albeit this trend of pastries is French, it has become a crowd-pleaser in the bakeries of Vietnam, similar to the Haitian Patty. Pate Chaud can be vividly pragmatic in the streets of Vietnam and is served overseas as well, such as Thailand.

HOW MANY CALORIES ARE IN ONE SERVING OF PATE CHAUD?

Not going to lie, the craving for these mouth-watering pastries is provoking, however, fitness is a priority. You wouldn’t want to waste that summer body you endeavoured so hard for!

On average, one serving of Pate Chaud (100 grams) contains an entirety of 330 calories – that is; 20 grams of fat; 28 grams of carbohydrates; 3 grams of dietary fibre; and 13 grams of protein.

HOW TO PREPARE PATE CHAUD?

Like all recipes, every family has a distinct recipe for preparing a dish. In this article, I will be focusing on the traditional recipe, which is with ground pork and mushrooms.

PREPARATION TIME = 1 HOUR

INGREDIENTS

  • Puff Pastry Sheets (2 packages) – you can, obviously, prepare your own puff pastry sheets, however, store-bought sheets are more convenient. You can find these at any supermarket, and they are not that expensive!
  • Ground Pork – as per the traditional recipe, I will be using ground pork, however, you can substitute with minced beef or chicken.
  • Mushrooms – these provide an exceptional aroma and texture to the Pate Chaud, although, this is an optional ingredient.
  • Fish Sauce – this provides the pastry with the pizazz and tanginess!
  • Onion – any sort of onion can be used, however, I would suggest yellow or white onions for this recipe.
  • Salt – to season the ground pork.
  • White Pepper – I personally prefer white pepper over black pepper simply because it has an enhanced zest. Albeit, you can substitute with black pepper!
  • Garlic Powder – why not?
  • Egg Yolks – these will act as a glue to the meat, preventing it from collapsing.

HOW TO PREPARE?

  1. Step #1 – Turn the oven on and pre-heat it to 205 °C.
  2. Step #2 – Prepare TWO baking sheets by placing them on a parchment paper and greasing them.
  3. Step #3 – Add the ground pork, mushrooms, onion, white pepper, salt and garlic powder along with the fish sauce into a mixing bowl, and mix them until everything is merged.
  4. Optional Step – Fry a small morsel of meat in a frying pan to ensure that it is seasoned to your preference.
  5. Step #4 – Once you’re satisfied, it is time to assemble the meat! Use a 3-inch cookie-cutter to shape the dough, after which, you will obtain circular cuts. You can use the excess dough to cut more pieces!
  6. Step #5 – Add TWO teaspoons of meat on HALF of the cuts of dough.
  7. Step #6 – Whisk TWO egg yolks in a bowl, and gently brush the edges of the dough, around the meat, with the egg yolks.
  8. Step #7 – Now position the other HALVES of the cuts atop the meat-filled dough, and firmly lid both cuts of dough by mildly pressing on the edges. (NOTE: score the pastries to permit the release of steam during baking.)
  9. Final Step – Place the pastries on top of a baking sheet, and bake them in the oven for almost 15 minutes, or until they are golden-brown on the exterior and the meat isn’t raw.
